CRAFTED FROM A BESPOKE BLEND OF MALTED BARELY, WHEAT & OATS, AND FERMENTED ON A MIXED CULTURE OF LACTOBACILLUS & HOUSE YEASTS, GIVES A SMOOTH AND SILKY MOUTHFEEL.
COUPLED WITH A PROMINENT SOUR PROFILE WHICH COMPLIMENTS THE ADDITION OF PLUMS & BLACKBERRIES, BEFORE BEING LAID TO REST FOR 24 MONTHS IN FRESH PINOT NOIR CASK.

The outcome is a claret-hued fruited sour that exudes an aroma of oaks and Autumnal fruits. An initial taste of sweet plums and hand-picked cherries, unfolds into a layer of blackberry jam. Its resemblance to red wine shines on the finish, with a prominent, lingering tannic character.
