Our third edition launched in September 2021. It begins with producing a slightly spicy gin that we would make for our London Dry but also add star anise and allspice to the initial botanical mix. Following distillation, Madagascan Bourbon vanilla pods, cloves, ginger root and more star anise and allspice are macerated in the gin for 5 days, infusing rich, deep soft spice flavours and beautiful burnt amber colour. On the nose, you will get hints of charred orange peel, a touch of cracked black pepper, and sweet cinnamon rolls. Those elements absolutely follow through onto the palate, with waves of warming spice and a lovely sweetness from the vanilla. It's a gin that you can treat as a rum or whisky for sipping neat on a cold winter's night or add to sparkling wine for a somewhat festive French 75 cocktail.

Rare Bird

Malton's first distillery, Rare Bird is the brain child of husband and wife team Matt and Elizabeth Stewart who have created a delectable London Dry Gin. Based in Talbot Yard their vision for the distillery was to create a beautiful space where the public could visit. With exposed brickwork, vintage wood floors, chandeliers and an incredible copper still named 'Florence' they have done that in spades. Combine that with sexy blue bottle, the gin school upstairs and the drink itself (at its best with a nice tonic and slice of grapefruit) you have a very rare bird indeed. Upstairs at the a gin school visitors can even create their very own bespoke gin.
