Sometimes when it comes to brewing a beer, we feel it’s best to just strip everything back to basics, and let what you’re good at come through naturally. We adopted this standpoint when brewing Eight Line Poem, and with the song it references in mind – a very simple piano, guitar and vocal track – we wanted to bring the basics to the party on this beer, but have them done really well; much like Bowie himself had a wonderful knack for doing. A two hop line up of new school and old school varieties like those Polly’s originals beers of old? Check. Idaho 7 brings the sticky stonefruit and tropical notes, backed with a subtle pineyness, that melds perfectly with Columbus to accentuate those intense citrus notes, with a whisper of spiciness to round everything off.
