As we’ve grown over our existence, we’ve been incredibly lucky to work with some of the most in-demand hops in the world; learning the little idiosyncrasies of this wonderfully complex ingredient, and what varieties express themselves best when paired up with others is what keeps us coming to work day after day. We’ve been trialling and testing combinations behind the scenes here at Polly’s between some of the South Pacific’s finest paired with the best the US has to offer and were absolutely blown away by the combination of NZ heavyweight Motueka, and the Hop Breeding Company’s Experimental Hop Number 586. Independently two hops we’re very familiar with but paired up as a team this reminded us exactly what inspired us to brew in the first place – bright citrus notes perfectly play off a medley of mango, guava and lychee before a whisper of herbal complexity joins the party to save straying into cloying territory.
