Back to basics with a less traditional twist We brewed up a regular old honey malt blonde with two subtle changes to stamp our mark on it. We decided on a yeast strain a bit more associated with best bitters and east coast pales, less flock, more stone fruit esters and the only aroma addition of hops went in on the second mash, helping the beer to focus on Malt and Yeast character, with the more subtle ends of Bullion hops (NOT a subtle hop by any means!) peeking their heads at the back end. Low key notes of spiced blackberry and unsliced ripe peach. Dry, sinkable and thirsty quenching.
