Our beer for optimists receives the single hop treatment with the undisputed king of hops - Simcoe. We have taken our All Clouds base beer rich in oats, wheat and Maris Otter, fermented with our house pale yeast and added Simcoe in a few stages to extract as much oil, aroma and flavour from this year's YCH Simcoe hop harvest. The resulting beer is piney, hugely tropical and aromatic with a little sweetness and loads of body.
