This Beer is the second iteration of a project we have been working on at the Brewery for a few years now.
Love Among the Ruins is a 7% abv sour red ale that is aged in red burgundy with Raspberries a perfectly balanced sour ale which went on to win Silver in the World Beer Cup Awards for 2016
How did we create such an amazing beer you ask? well....
We wanted to create a modern sour ale that aged in barrels that had the same complexity and depth of flavour that our favourite sours from the USA offer. After using Belgian yeast strain to give a good foundation on which to build, we aged the beer in Burgundy barrels with the fruit for well over a year.
Adding culture of Brettanomyces, Pediococcus and Lactobacillus at set points let us sour the beer gradually over many months and give layers of flavour that can only develope over time. The rich fruit aroma and flavours compliment the sharp sourness which subsides for more malt and yeast characters to come through.
Lively, dry and thirst quenching, this a beer to savour; a complex and mature sour ale that we feel fulfils our original objective.
